Tarragon

Green, warm, fusing, anis-like.

Tarragon is a warm, fusing note belonging to the fougère family. Its aromatic facets are reminiscent of anise or fresh celery—slightly bitter and intensely green. The presence of estragole in tarragon gives it its anise-esque quality.

Production

Despite originating from the Middle East, Central Asia and Russia, the best quality tarragon is thought to derive from France. The herb itself is not particularly pedantic—growing without excessive water and preferring hot, sunny spots. To gather its aromatic scent, essential oil is extracted through distillation of its leaves.
